So what is the difference between a Stainless Steel and a Carbon Steel Blade?
Very little really - it is often a matter of personal preference. A Carbon Steel blade is not as sharp as a Stainless Steel blade but will last longer where abrasive materials - such as cardboard - are being cut. As its name suggests, stainless steel will resist the effects of moisture but carbon steel will quickly show signs of discolouration and/or rust in such circumstances (although, unless it is very severe, it will not affect the performance of the blade).
